    Falafel is basically chick peas, fava beans, onion, and spices ground into a paste. You then fry/bake the paste. Traditionally you serve it on middle eastern flatbread with lettuce, tomato, and tahini sauce (tahini is ground up sesame seeds... kind of like peanut butter).

    I tried making it on my own but without a food processor its difficult, so I opted to get mixes from the Lebanese store down the street from me (basically they do all the processing and mixing spices and then dry it out so you just add water). The mixes are all organic so there's nothing you wouldn't get if you made it yourself.

    All I can say is... so so so so good. I usually fry them up with olive oil, and then have one on a whole wheat burger bun with some ketchup and tahini. I suppose I should bake them, but they always come out less crispy that way. It's a treat :)

    I've been wanting to make this but I don't have a food processor. I got a recipe from Rachel Ray's site that sounds really good. I might just spurge and buy one.
    I don't have a store that would sell anything close to the mix. But that's life in a small town.

    I have made falafel from a mix I can find at Walmart on the ethnic foods lane, and trust me, I live in a small town! Its just the spices so you need to add the chickpeas that you grind, it a yellow box I think. I love falafel stuffed in a pita with lettuce, tomato a bit of red onion and some plain yogurt on top. Yummy.

    apples with peanut butter!!! I had never heard of combining the 2 before coming on here. At first I thought eww gross but decided to give it a bash and I LOVE it!!!! My new favourtie snack. I wish I could have more of it.

    Also love houmous and avacados. Used to hate them both but pregnancy made me love them and it stuck :smile:

  • Some foods I like:
    1tbs natural peanut butter and 1/2 sliced banana on a slice of whole wheat bread!
    Chopped apple, (easy baked in microwave), sprinkled with cinnamon and stuffed in a whole wheat pita, topped on a waffle, or tossed in some oatmeal.

  • My new fav snack as of yesterday is:

    A Trader Joe's brown rice cake
    1 tbsp peanut butter
    drizzle of honey.

    YUM!

    Might be a pregnancy thing though!!:laugh: :laugh: :laugh:

    I have a few new favs...

    1.) Sugar free nesquick w/ lowfat milk (i hate milk, so this helps me get it in and satisfys my sweet tooth)
    2.) apples w/ peanut butter OR apples with Nuttella spread.
    3.) Spinach w/ minced garlic and feta cheese pizza made using a 100 cal tortilla.
    4.) Sugar free Jello w/ lots of pineapple, mandarin oranges & canned cherries.
    5.) Skinny cow ice cream (any kind, but I love the ice cream bars)
    6.) Just about any kind of soup with lots of veggies in it. I puree it in the blender to get a whole new flavor when Im tired of making or reheating the same thing. You'd be surprised!

    oatmeal with vanilla protein powder, costco frozen berry blend. Tastes SO much better than those instant packets and better for you!

  • These are my new favorites:
    -1 wedge of Laughing Cow Light Garlic & Herb cheese on 5 Sesmark Sesame Rice crackers (78 Cal/ 3g Fat)
    -Swiss Miss Sensible Sweets Diet Hot Cocoa (25 cal/0g Fat) This helps calm my sweet tooth in the evenings.
    -Fiber One Bars
    -Apples and peanut butter, but I must admitt, all the talk about peanut butter and bananas sounds yummy!

    Fresh mangoes (I ate so many while in the Philippines -- those are likely the best in the world!)

    I have fallen deeply in falafel love. Low calorie, filling, lots of fiber and protein, and the mix to make them is so incredibly cheap I can't believe it. A 2 dollar tub makes 25 falafels!
