What do you do with Thanksgiving leftovers?

I usually do the following:
- Breakdown the turkey into white vs. dark meat, and bones/fat/skin
- Depending on the amount of white meat, I usually save a bit for a sandwich or two (because who doesn't like turkey sandwiches), use the rest for Turkey pasties or turkey pot pie.
- I make turkey chili and/or turkey soup with the leftover dark meat (usually chili as I don't really like dark meat)
- Take all the bones, fat/etc. (which is quite a lot if you have a 20 pound turkey, and break them down. I use these for bone broth and freeze the broth.

I make turkey salad. I have a recipe i use with chopped onion, celery, grapes, apples, mayo, and relish that is delicious. I eat it by itself or on sandwiches.0

Ate them! We basically did second Thanksgiving dinner tonight, minus the parmesan green beans (which all got eaten yesterday). We're out of stuffing and turkey now, and stuffed mushrooms and nearly out of carrot-turnip mash. We have a little ham and some mashed potatoes and that is pretty much it. Ham will be consumed with eggs probably.0
