How many squats a day would I need to do to see any difference , I currently do about 40 a day using my kettle bell, is this enough to strengthen my legs etc

what difference are you wanting to see? to gain strength and muscle you need to increase weight and/or intensity. you could "see" the difference if you could do more reps and/or a higher weight. To see muscular difference you need both a suitable muscle mass and low enough body fat%.
You will be strengthening your legs doing the squats compared to doing nothing.1 -
