Opinion time!
I've never done either but have some ricotta and spinach to use with them, so what's your favorite?

HASSELBACK
Or
STUFFED

Do you mean hasselback potatoes vs stuffing with your chicken?

I had to look up hasselback but I only find a recipe for potatoes. Both stuffed and hasselback would be very high in calories but the hasselback potatoes do look amazing. Personally, I would pound out some chicken breasts and stuff it with the ricotta and spinach, cover the chicken rolls in italian spices, put one small pat of butter on each breast and bake at 400 for 25-30 minutes.

Edit: Wait, I found this recipe but I think i would still do a chicken roll instead.

Aha. Hasselback was the name of a restaurant in Stockholm. Their potatoes became a famous dish. If you do them, it is easiest to place the potatoes in the bowl of wooden spoon to prevent slicing all the way through.

Hassleback chicken is just like potatoes but you do it with chicken. I’ve seen it on Facebook.
    I like stuffed

Slice thin and rolls just seems easier but I guess both would work.
