    Just made this. I prefer the bagels, but this ok. I may not have done something right. It tastes a little eggy.

    Here's a recipe for a great keto friendly dinner. I had all the ingredients already when I saw this except the salsa verde. Not sure how it freezes since we ate it for several days:

    CHICKEN SALSA VERDE

    .25 garlic in oil
    1 can (10 oz) Rotel tomatoes with green chilies
    1/2 cup sour cream
    .75 cup salsa verde I used Treasure Valley brand from Safeway
    1 cup mixed Mexican cheese shredded
    1.5 cups diced cooked chicken or turkey*
    1/2 cup chopped fresh cilantro**
    4 ounces cream cheese softened
    1 ounce diced roasted anaheim pepper
    454 grams Cauliflower blanched

    Mix everything together (save half of the cheese to sprinkle on top) and place in casserole dish. I heated in the microwave until everything was hot. Served with extra cilantro and 1/2 cup cheese sprinkled on top.

    Makes 4 large servings. Comes out rather runny so I served in a bowl.

    Nutritional value per serving (4 serving recipe): Calories: 410, Fat: 30g, Carbs: 12g, Protein: 22 grams

    6 serving recipe: Calories: 275, Fat: 20g, Carbs: 8g, Protein: 15g

    *I used turkey since I had a package of homemade in the freezer. Could make with chicken (i.e) rotisserie from Costco etc., but not sure about the nutritional value of that.

    **Since cilantro is "free" I sprinkled some on top.
    You could put some pork rinds (regular or spicy) crushed on top to give it a more "Mexican" flavor and some crunch.

    If you freeze some please le me know how that works.

    Does this fill you up? I would be chewing my arm off an hour after eating this. Personally I would add some chicken, egg or beans.
