Why can I only lose a pound of weight a week when I starve myself?

No wonder your body is demanding fuel. You should not be eating only 1000 calories per day to begin with, and then not eating back exercise calories makes it worse. Your height does not necessitate doing this. I know because I am 4'11.75" and maintaining at 110-115 pounds--extremely close to your stats.
Your wedding is not going to be any different if you weigh 10 or 12 pounds less on that day. However, if you keep up this pattern of eating, you will likely feel miserable.
Start eating enough calories consistently, and read the threads on strength training and recomp.5 -

Why do you want to lose as much as possible for your wedding? What purpose will it serve? Is your dress too small to fit you at your current size? If so, how much do you realistically need to lose in order for it to fit? I think it would be better to determine whether that goal is actually possible and then, if it's not, come up with Plan B rather than putting your efforts toward a certain to fail Plan A.6 -

Ive just adjusted my lost on my fitness pal to 0.5 pound a week, so maybe that will help me out.
My dress is a bit tight on my back, so I have a bit of back fat which I hate and plus i will be wearing a swimming costume on my hen do, so i just want to look nice for that really.5 -

You'll look wonderful on your wedding day, whether you lose the pounds you want or not. One of my daughters got married last year and wanted to be just that teeny bit lighter on the day but she was radiant [and you will be too] and she has maintained all she lost before her wedding.5 -

You're on the right track by reducing your goal. Now stick to it all week long rather than over restricting and bingeing. I think you'll find that this lowers your stress levels too.6 -

You're landed yourself in a restrict-binge-restrict cycle. You need to up your calories to a REASONABLE level, all of the time. That will help your weekends come more in line. And then you do need to weigh and track ALL THE TIME. Not just some. Your binges are wiping out your deficit.
At your height and weight, the safest reasonable weight loss goal is half a pound a week. But that means a *reasonable* deficit, and not this binge and restrict stuff that you're doing. Will your wedding be any less meaningful if you lose eight pounds instead of 12?3 -

Your back looks lovely. Nice and toned, with a good spine dent. You also have a corset back on the dress, which gives you quite a lot of leeway.
What happens if you don't wear the swim gear for your hen night? Will the world implode? Will your friends think less of you? (Protip: If they do, they're not true friends.)
And, I hate to break it to you, but you can't spot reduce. There's no guarantees that loss will come from where you want it to.7 -

I have a solution. just make sure all your bridesmaids are fat. Standing next to them, you'll look thin as a rail. And no crash dieting required.21 -
I'm sure a 8 pound loss will be enough for me on my wedding day and maybe I'm just being a bit picky with everything.

If your lifting weights your building muscle which makes you gain weight. What is your BMI? If you have very little body fat and your lifting weights your not going to lose weight. Unless you start losing muscle by eating to little.25

Glad to read later in the thread that you are going to up your calories. I'm still going to comment on this post, as it may be useful for you or others.

She's not going to build muscle in a calorie deficit. Beyond that, it is *extremely* difficult for women to gain an appreciable amount of muscle weight with immediate scale impacts.

Doubtful at 5'9" and at 1300 cal a day she's building muscle.5 -
Because you don't really have weight to lose...losing 12 Lbs would be a huge % loss when you're already at a healthy BMI. To boot, your cortisol levels are probably through the roof with the stress you're putting on your body by under eating and doing crap loads of exercise.8

less is more.. you are doing more more more. Your body is in alarm mode. The way I lost weight is actually eating six times a day.. all food groups. I lift weights only two times a week for a half hour.. that's it.. and I get optimum results. WE are brainwashed into thinking eating less and exercising more will burn tons of calories and the math will work and you'll lose 3 or 4 pounds a week. Well? nah.. it doesn't work.
Were I you.. I'd back off the obsessive workouts.. I bet you start losing.. and don't starve yourself. look at your post title.. that is no way to live your life. you can lose weight without starving and working yourself out to death.22 -
