Delicious Bean Soup!

This recipe is from the Eat Clean Cookbook and its amazing!

Maui Black Bean Soup

2 tbsp extra virgin olive oil
2 ribs of celery
1 large carrot
1 red onion
2 red peppers
2 cloves of garlic
1 tsp cumin
1 tsp oregano
1 tsp basil
1 tsp chilli powder
4 cups of low sodium vegetable broth
2/420ml cans of black beans
1/420 ml can of diced tomatoes
1 cup of corn
Salt and pepper to taste

1. In a large skillet heat oil over medium heat. Sauté the carrot, celery, onion and peppers until onion is translucent. Add garlic and spices.
2. Add stock, beans and tomatoes. Bring mixture to a boil and then reduce heat. Cover and let simmer for about 20 minutes. Blend soup with a handheld blender. Add corn and let simmer for another 5 minutes. Season with salt and pepper.

About 178 calories per serving.

    well as serving size, my guess would be 8 oz. but not sure.

    Fiber: not sure, but the beans are a good source of fiber!

    Not sure on the serving size, I eat it until I'm full!
