Ham and egg pots

NOM NOM.. try this
get a muffin tray and line it with some Ham, Then place some sliced tomato on top of the ham , Crack an egg on top of the tomato- season to taste and wack it in the oven - served with salad it goes down a treat.

    Gonna make this for breakfast tomorrow. Could be nice to with some spinach baked into it as well.

    I may have to make an exception to my "no eggs" rule (and find a ham substitute, of course). These sound delicious.

    I whisk up the egg and sprinkle a little cheese on top. They rise like proper muffins and are delish.

    I put diced green and red peppers, and mushrooms and a sprinkle of cheese and whisk the egg. Makes them like little mini quiche's. Delish!

    I make these but chop up my meat (usually chicken) and scramble the egg and pur it all together. It is ridiculous; high in protein and crazy good!

    Mine with chicken, cheese and the whole egg was about 100-110 calories per muffin.

    I just made some with light ham, light philly cream for cooking and tomato and onion and with that they are only 45 cals each! Gonna take them on a picnic lunch tomorrow.

    I have never made these, but here is my guess.

    2 oz Ham
    1/4 Tomato
    1 whole egg

    Calories 166 : Protein 17g : Carbs : 3g : Fat 9g


    I would love to see the carbs higher than the fat. Here is my solution


    1/2 Thomas lite multigrain muffin
    2 oz Ham
    1/4 Tomato
    2 egg whites

    X1 Calories 158: Protein 21g : Carbs : 16g : Fat 3g
    X2 Calories 316: Protein 42g : Carbs : 32g : Fat 6g
    X3 Calories 474: Protein 63g : Carbs : 48g : Fat 9g

    Put in muffin pan.
    Bake at 425 for 10 min

    guessing on the time. Never done this before.

    I'll take a X3. This might be my new breakfast

    Oh yeah! I'm a Quorn fan too. Hubby prefers the Quorn bac'n over the real thing and he's a die hard carnivore (I'm a veggie). I suppose you could use a veggie ham deli slice too.
