It's essentially just a mixture of seasonings. Different brands have different blends, but most contain at least salt, pepper, paprika, garlic salt, onion salt. Some add in turmeric and/or cayenne.

I know what it is and we sold a variation at Penzeys. I just have never used it.2 -
Tons. Aside from the obvious salt and pepper I regularly use celery seed, oregano, parsley, paprika, garlic salt, turmeric, cumin, cayenne pepper, saffron, cilantro, and cinnamon. In summer I use a lot of fresh basil.0

Cinnamon, curry (ALL kinds!) chives, parsley, smoked paprika, dill. Garlic and onion do not sit well with me (I am Italian too!). I love herbal blends, savory. If I have lentil or pea soup then cumin for sure.0

I probably have over 100 different herbs and spices in my kitchen. All of them. Not together of course, depends what the recipe calls for.0

I am always using some type of spice, or spice mix. Most frequently used are:
garlic (powdered or fresh)
cumin
chili powder
red pepper flakes
And I love the Mrs. Dash salt free seasonings.0 -
I wouldn't know where to start. When we had a house fire, they gave us $1500 just to replace our spice cabinet. That was more than they gave us for a new couch. I use spices for EVERYTHING. What I am making makes a difference in what spices I use. These are a few of my rules... For Polish or Hungarian dishes, smoked paprika and garlic. For Mexican dishes, cumin and cayene. For Indian dishes, curry, and garam masala. For Thai dishes, star anise, clove, and ginger. For homemade sausage, white pepper, sage, red pepper flakes and fennel seed. Italian, oregano, basil and garlic.0

This is my primary spice cabinet. The backups are above the fridge.
Tumeric, ginger, cardamom, nutmeg, cumin, coriander, Chinese peppercorn, and red pepper all featured heavily lately.
I make my own mixes mostly but do love Trader Joe’s ‘everyday’ seasoning (sea salt, mustard seed, peppercorns, coriander, onion, garlic, paprika, Chile.)
You won’t find Italian seasoning in my cupboard. I like those things fresh (thyme, oregano, rosemary) but can’t stand dry. Same for dill.
I hate ground nutmeg but like fresh grated.
I also really dislike standard cinnamon because it tastes dusty to me. I can do Chinese cinnamon if fresh ground or the smaller-batch produced South American cinnamons.
My spice and herb shopping is so extensive that I haunt the Indian and Asian grocery because savings, variety, bulk and whole spices.1 -
Hot peppers. Lots of hot peppers.
Love Carolina Reapers. But then I seem to have developed a level of tolerance that would burn the average person gut.0 -

I have an entire cupboard of spices in my kitchen but I generally start with salt, pepper and garlic and build from there.0

Zataar, blackened seasoning, Montreal steak seasoning are good. Also cumin, paprika, garlic, onion, and cayenne.0

Your question makes me sad. I'm allergic to most, if not all, of the basic herbs (I used to be able to eat basil but it isn't going so well now). No rosemary, oregano, sage, etc for me. However, my husband is a great cook and makes a mean garlic anything.0

I have about 40-50 little pots with spices (used to buy them by grams in my own pots) and use whatever I need. I cook quite a bit of Indian food, various Asian (currently into Malay and Indonesian), Chinese, French.. everything goes.0

I always cook with spices and herbs. Bland food is just boring. My go-to blend it salt, pepper, garlic, onion, and paprika. It really depends on my mood though. I have several spice blends, such as "Trader Joe's Everything But the Bagel" and "Trader Joe's Umami Seasoning", plus some Asian blends. I also have a whole collection of Indian spices because I make Indian food a lot.
I just avoid cinnamon because I'm allergic to it. If something calls for cinnamon, I usually add some Allspice instead (Which is not a blend of all spices, like I used to think. Its actually a berry/seed).0 -
I have a family member who works at Mountain Rose Herbs, so I have lots and lots and lots of dried herbs and spices. I use them in all of my meal prep. It depends on what I'm cooking and the flavor profile I'm going for, but my staples are oregano, basil, parsley, cilantro, comino (cumin), Chinese 5 spice, smoked sea salt, Tony Chachere's spicy Creole seasoning; red pepper flakes, of course good ol' onions and garlic.0

No one has mentioned herbes de Provence? I use it on everything. A bit mixed in with vegetables heading for the grilling basket is delectable.
Victoria spice brand has some phenomenal mixes. I used to find them at TJ Maxx for $5 bucks a big jar. Their toasted onion, pizza seasoning, honey Aleppo and herbes de Provence were all good. I just can’t bring myself to pay $10 a jar plus shipping now. I got spoiled.0 -

I use Aleppo pepper instead of cayenne or red pepper flakes. More flavor, a touch of citrus, and slightly milder heat.0
