I’ve been making a super easy one pot stew type dish lately. I dump a can of diced tomatoes in a pot with 30g quinoa and 30g lentils. I add some curry powder, cayenne salt, and pepper, and put the lid on and let it boil for about 15 minutes. If it starts to stick I throw in about a half cup of water. Once everything’s soft I throw in a TON of kale and let it wilt a little and then throw it in a bowl. It’s about 300 calories for a full bowl of super filling goodness.2
