I keep reading that calorie deprivation ruins your metabolism. Do you all think this is true or a bunch of bull?

With certain qualifiers, a bunch of bull. If someone goes on a very low calorie diet for an extended period of time, they may do some damage to their metabolism. Other than that, calorie restriction within reasonable bounds does not ruin your metabolism is any way.6

Yes it can cause your thyroid to be low. Mine is low.16

What constitutes as very low calories and for a long time? 1200 or lower?1

Yes, for a woman. And done for many months or even years.

So if you eat 1200 to lose weight, how can you avoid the consequences of slowing your metabolism?1

1200 is not some magic number. It is the nutritional minimum for women to maintain adequate nutrition and assumes a reasonably balanced diet. It is not a number of calories any woman should stay at for long periods of time and what the right level of calories for weight loss for someone should be depends on their current weight and height. Just because that is a minimum for minimal health doesn't mean that is what someone should set their calorie goal at.
And you avoid the consequences of slowing your metabolism by not staying at a radically low calorie level for a long period of time. Why is this a concern for you?6 -

You should only eat 1200 calories if that is appropriate for you. Here is an article about why it should not be chosen arbitrarily:
