Cooking with sauces that reduce

I cook chicken gizzards & hearts in a can of beer and some milk. The liquid reduces completly once it is cooked. Would I count the milk and beer that I used and add it to the caloric value of the meal? Your help is appreciated.

Personally I wouldn't. I don't count the olive oil i use when I cook chicken or eggs.0

Personally, I always count the oil when cooking it adds calories.
When sauces reduce it's really only the water that's evaporating. So I would count the Beer and Milk.0
