Is anyone doing the Mayo Clinic diet because when I log in my food for the day based on what the Mayo diet recommends, I am not hitting 1200 calories

How many calories are you supposed to be eating and how many does it say when you log? It's possible you are using an incorrect logging entry.1

It's possible you are choosing bad entries in the MFP database - many are user entered and have bad info, so you need to look for entries with numbers that match the package or the USDA published values for whole food.
It's possible you are choosing lighter versions of meal ingredients than the diet intends and are actually not eating enough.

It wouldn't, one reason it's not sanctioned by the Mayo Clinic and is a bad idea.

If the latter, it's basically similar to DASH, but shouldn't have any particular calorie amount, so eat more to reach your cals.6 -
