So thus far I've had a super tiring busy week. I've earned a lot of surplus calories from activity.
I had a moment of weakness and ate a couple of cookies while baking with my kids. I've logged them and my (extra) calories more than cover it, but I'm feeling really guilty like I've messed it all up

Take it as a learning lesson to not do it again, it's not the end of the world as long as you're within your caloric goal you're fine.21

Why would this make you guilty? It's just food. Yummy food that you chose to eat. You didn't even put yourself in a calorie surplus for the day.
Assigning foods a moral code is counterproductive. Food is not "bad" or "good", it's just food. Own your choice. Learn from it.15 -

OP, the goal here is to eat what you like within your calorie goal. And that means that you can have a few cookies if you make them fit in your calorie budget.20 -

Yep! I've having a Subway sandwich and potato chips for dinner. Yay for eating what I like within my calorie allowance.11 -

OP, you haven't messed anything up. You got to eat cookies and stayed within your calories - I'd call that a win!11 -
Unless you're diabetic... fun with your kids matters more than a couple of hundred calories that are within your goal anyway.
You're baking with your kids! Sharing those cookies will be a memory that makes them smile when they're baking with their own kids. Or grandkids.

One very good reason to earn extra calories through activity is so you can eat food you enjoy without feeling guilty. There’s no need to make this harder than it has to be. Eating the correct number of calories to fuel your body and maintain a healthy weight is something you will need to do for the rest of your life, even after you lose all the weight you want to lose and no longer have to stay in a deficit. Were you planning to never enjoy baking with your kids again?
I don’t know where you learned to feel guilty about food, but try to unlearn that lesson. It’s not a helpful one. Reserve feeling guilty for times when you do something that hurts somebody.14 -

Sounds delicious! You did nothing wrong. Were you planning on giving up all cookies for the rest of your life?! No way! Sounds like you enjoyed something yummy in moderation, which is a huge success.4

You only “mess it all up” if you give up. I’ve had several times when I was hungry all day long and ended up eating something like 1000 calories over my limit. I just started logging and eating within my calorie goal again the next day (and the day after that, and the day after that...). Long-term consistency, patience and perseverance are what work. Everyone will have days where they “mess up”...I’ve had many. But today I weighed in at my goal weight! It probably took longer than if I’d been stringently good, but I got there in the end.5

The best day, diet wise, was the day I realized I had to let go of the guilt for eating something tasty. It fit in your goals, there's nothing wrong with that. Even if it hadn't fit in your goals, log it, and keep going. There's no starting over (not tomorrow, not next Monday), just keep moving forward from right now.6

I see it as a learning lesson to balance a calorie appropriate, nutrient dense diet, with treats in moderation, guilt free.

Do you think you that having 1 low calorie meal/day is all that's needed to lose weight? Of course not. So by that same logic having 1 high calorie meal/day doesn't matter.
You didn't mess up by indulging, you messed up by trying to be perfect all the time. Weight management doesn't come from perfection and 100% adherence. It comes from being pretty good, most of the time.5 -

I hope you mean that the lesson to be learned is not to feel guilty at all next time. If the OP decided to eat her entire day's worth of calories in cookies she would still be fine. Obviously that would not be a great plan for an extended period of time but for a day it would make no difference.

Did you stay within your calories for maintenance?
Did you enjoy spending that time cooking with your children?
Did you enjoy eating the cookies together afterwards?
If you are answering yes then you haven't messed up. You have created some fond memories to treasure.

Hahaha I always save some calories each week for something super yummy.5
