What are your favorite recipes? I typically eat lower carb so if you have any, I’m all ears. Looking for more ideas as I continue to make the same things over a 2-3 week period.

    I don't do low carb so can't really offer recipes. I will tell you how I avoid food boredom.

    When I go grocery shopping, I pick up two ingredients I've never had before.

    It's either a new veggie, fruit or fresh seafood item. I've also tried new seeded or sprouted grain breads or even gluten free bread and been pleasantly surprised. I don't need gluten free, by the way.

    I made a smoked haddock kedgeree last night using cauliflower instead of rice. It was pretty darned good.

    I pulsed the cauli in my processor and microwaved for 5 minutes.

    Meanwhile, sauteed some shallots and a clove of garlic in a little rice bran oil. Added green pepper, and cooked off the haddock. I then added some indian spice and the cauliflower. Made sure it was cooked through, and served with a bit of minty yoghurt dressing (Crucials brand). Not including the spice (which I didn't log) it came in at about 15g carbs and about 288 cal. Delicious.

    I made a chicken adobo in my instant pot recently that was awesome! Really low carb but delicious. I eat it over shredded cabbage and white rice but you could sub for cauliflower rice and really cut the carbs down!

    I use Yummly.com for a lot of stuff. Can pick specific dietary requirements, ingredients you don't like, and it will find recipes for you.

    I also take the Kroger Weekly Ad and see what proteins are on sale. Then I have each child pick a protein and 2-3 vegetables. Then I find a recipe that fits their selections.

    I've had each kid pick a letter in the past, picked a country that starts with that and then found something to try.

    In the past, I used a service called emeals. Weekly menu and they have a low carb meal plan.

    Here are several meals I do with no starchy carbs (plenty of veg though). I don't miss the carb component with these. If you are cooking for a carb eating family add a side of rice to the asian dishes for everybody else.

    Nam prik ong is a spicy Thai dip of ground pork and tomato for raw veg. This recipe is easier than most because it uses a commercial red curry paste instead of making that bit from scratch.

    Beef lok lak is Cambodian stir fried beef served on a bed of salad dressed with a simple sauce of lime juice and pepper. Sometimes served with a fried egg on top. Try the Khymer lime and pepper sauce on steaks and seafood. It is shockingly good for something that contains no fat.

    Bagna cauda from Piedmont is another meal consisting of hot dipping sauce for raw veg. Carb eating family members can add bread. This recipe is given as a starter, but a traditional bagna cauda meal would include bread which is held under the vegetable while transporting it from the dipping sauce to the individual plate. When the bread becomes soaked in the garlicky sauce, it is eaten too. A traditional full bagna cauda meal ends with scrambling eggs in the last of the sauce.

    Grande alioli is blanched seafood and raw veg dipped into garlicky mayo from Provence. Carb eating family members can dip boiled new potatoes too.

    Salade nicoise made with seared tuna steak is also from Provence. Often contains boiled new potato but this particular recipe doesn't include it, which you could add for carb eating family members.

    In general, if you want to reduce carbs in a conventional meal:

    1. Replace rice with blitzed cauliflower for asian meals. I like it raw but you can warm it up in the microwave.
    2. Shiratake noodles instead of pasta. Works better with asian noodle dishes than Italian pasta dishes.
    3. Roast starchy vegetable such as squash, parsnip, sweet potato instead of regular potato. Cauliflower can be made into a mash.
    4. Beans and pulses as a starch replacement. A tin of white beans can be made into mash. Still carby but less than rice, potatoes, pasta.

    Deviled eggs! You can lower the yolk calories by using 2 yolks per 4 egg whites. I eat 4......and, I am so full.

    Mix with what you like.

    Can make the deviled egg salad and eat with lettuce wraps or stuffed mini peppers.

    Brown Rice, Pinto Beans (dry not canned), pumpkin seeds, and mild taco sauce. Low calorie nutrient dense. I also add turmeric and ground flax seeds with a side of fruit. :)

    I forgot Tagliata di Manzo, a north Italian secondi (=main course) of rare sliced steak on a bed of rocket salad with parmesan shavings. It is my go to order in an Italian restaurant when I don't want carbs.
