Any ideas on an easy recipe for dinner tonight. Cooking for two. 300-400 calories.

You can look at my diary if youd like, i have a really basic chicken or pork/rice/corn or sauerkraut dinner every day for about 350 calories.
I cook the chicken in a little bit of olive oil, garlic, and onion. 100 grams of chicken cooked. I serve it with 90 grams of brown rice cooked in chicken broth (weighed cooked because i meal prep it for the week) and grilled corn.
I marinate the pork chops in soy sauce, brown sugar, garlic, worcestshire sauce, and a little oil. Usually 85 to 90 grams of pork cooked. Served with 90 grams of rice and sauerkraut.

Stir fry - I would do it with chicken thighs but that's me. Boneless skinless chicken thighs cut into strips or bite sized pieces (this is easiest done with kitchen shears), vegetables of your choice cut in whatever way makes since for that vegetable (I would use broccoli, carrots, onions, mushrooms, and maybe cabbage), and a few tsps of oil. Add your sauce of choice and serve it with rice.

She asked for low calorie options, not low sodium. Theres no reason to be so afraid of sodium unless you have a medical condition. I always stay right around or well under the recommended intake of sodium each day (unless i eat frozen spring rolls, which I usually do once a week) and this is my dinner every day. I dont really understand your point here?6 -
Can't go wrong with a nice slab of grilled fish with mixed salad and a spicy dressing.7

I would do tacos! Guerrero small corn tortillas are 110 calories for 3, then your filling can be pan-cooked chicken thighs (marinated in lime juice, olive oil, garlic, and spices like cumin, onion/garlic powder, chili powder, salt, pepper). I always add diced white onion and cilantro on top.3

I like to season chicken breast with cajun, smoked paprika, garlic powder and parsley and cook it on the bbq. I also make carrot and potato foil pouches with 0.5 tbsp of extra virgin olive oil and season with seasoning salt. It's pretty high in sodium but low calorie.2

Usually I have some grilled fish, or canned if I don't have time to cook, and a big tomato and cucumbers salad. Sometimes I add several olives.1
