I was looking in my freezer and saw that I have a bunch of bananas in there. I was thinkning about making banana bread today. Does anybody out there have a healthy banana bread recipes???

    frozen bananas + some coffee + crushed ice + frozen coffee yogurt + LF plain yogurt + protein powder--- put all of that in a blender. Awesome coffee-banana protein smoothie. :-)

    Bombin Banana Bread!
    With Nuts: 209 Calories, 7g Fat, 32g Carbs, 4g Protein

    Without Nuts: 142 Calories, 4g Fat, 28g Carbs, 2.5g Protein

    Ingredients:

    1 Stick Butter Softened
    1 1/4 Cup Granulated Sugar
    2 Eggs
    4 Tbsp Sour Cream
    1 1/2 Cup Flour
    1/2 Cup Chopped Walnuts
    1 Tsp Baking Soda
    1 Tsp Vanilla Extract
    3 Ripe(Browned) Bananas Mashed, Should Equal about 1 1/2 Cups.
    Directions

    Greast 9” x 5” loaf pan.
    Beat Together butter and sugar
    Add Eggs and mix
    Add sour cream, flour, baking soda, walnuts, vanilla, and bananas and mix
    Pour into prepared loaf pan
    Bake at 350 Degrees for about 45 to 50 minutes or until the toothpick in center comes out clean
    Cool on rack
    Wrap in plastic wrap overnight
    Eat for Breakfast!
    14 Servings. Cut Slices 5/8” thick

    I am attempting a banana muffin recipe this evening -- I will let you know how it comes out.

    The recipe is derived from the 66calorie banana chocolate chip cookies recipe that's on here. I made those--and they came out good. But was looking to try it in a muffin form due to how mushy the cookies are because of the bananas.

    I will probably double or triple the ingredients listed below because they are muffins - so the calories will probably be between 100-200 depending.

    Here is the original post:
    " found this awesome recipe for banana chocolate chip cookies. It says it makes 3 dozen but i actually only got 2 dozen out of it (3 dozen and the cookies would be far too small for me)

    1/3 cup butter, softened
    1/2 cup sugar
    1 egg
    1/2 cup mashed ripe banana
    1/2 teaspoon vanilla extract
    1 cup all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    1/8 teaspoon baking soda
    1 cup (6 ounces) semisweet chocolate chips (i used ghirardelli 60% cacao baking bar, smashed into bits)


    Directions
    In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Stir in chocolate chips.
    Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray..

    Bake at 350° for 9-11 minutes or until edges are lightly browned. Remove to wire racks to cool. Yield: 3 dozen.

    Nutrition Facts: 1 cookie equals 66 calories, 3 g fat (2 g saturated fat), 10 mg cholesterol, 51 mg sodium, 9 g carbohydrate, trace fiber, 1 g protein."

    This is the one I use all the time, it's yummy. Can make a double batch and freeze the other loaf.

    •3 large bananas , well mashed
    •1 egg
    •1 stick of butter, melted
    •1 1/2 cup of flour
    •1 cup of sugar
    •1 teaspoon of salt
    •1 teaspoon of baking soda
    •1 cup nuts, optional (sometimes I put chocolate chips in)

    Mix all ingredients in a mixing bowl; put into a well greased loaf pan. Bake at 350° for about 60 minutes, or until a knife inserted in middle comes out clean.

    Here's a low-cal one that I've made. It's very moist! (Not as good as my grandma's banana bread recipe but much lower calorie...)

    Banana Bread

    1 mashed banana
    1 Tbls melted butter or margarine
    1 tsp vanilla extract
    1 cup Splenda
    dash salt
    1 tsp baking soda
    1 large egg
    2 Tbls skim milk
    3/4 cup flour

    Preheat oven to 350 degrees.
    Mix all ingredients together adding flour last.
    Pour mixture into 2 greased mini-loaf pans.
    Bake 20 minutes or until golden brown.

    *Calculated at 600 calories total for the 2 loaves according to the recipe calculator on MFP.

    1.5 cup flour
    1.25 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/8 teaspoon salt
    1/4 teaspoon vanilla
    2 egg whites
    1 cup mashed banana
    3/4 cup sugar
    1/4 cup applesauce



    Directions
    Combine banana, egg whites, applesauce, sugar, vanilla, and cinnamon. Add dry ingredients (flour, baking soda, baking powder, salt) until well mixed. Pour batter into bread pan sprayed with cooking spray. Bake at 350 degrees for 40-50 minutes or until toothpick inserted into the loaf comes out clean.

    From the "Cooking Light" complete cookbook:

    2 cups of all-purpose flour
    3/4 tsp baking soda
    1/2 tsp salt
    1/4 cup unsalted butter, softened
    1 cup sugar (I dropped it to 3/4 cup)
    2 large eggs
    1 tsp vanilla extract
    1/3 cup plain non-fat yogurt (I used Trader Joe's non-fat Greek yogurt)
    3-4 ripe bananas

    Preheat oven to 350°.

    Mix flour, salt, and baking soda in bowl; set aside. In another bowl, mix butter and sugar on medium speed until well blended (about a minute). Add eggs, one at a time, allowing each egg to mix well before adding the next one. Add vanilla, yogurt, and bananas. Mix until well-blended, then add flour mixture. Pour batter into loaf pan or muffin tins coated in cooking spray.

    Bread: bake 1 hour
    Muffins: bake 20 minutes

    also used 4tbsp egg whites, 1tbsp cinnamon. made 24 mini muffins for 31cal each. timer's about to go off and i'll let you know how they are!

    yep they're good. they'd be heaven with brown sugar and butter but alas, i cannot sacrifice those calories.
