Why Is It That Some Days......

Why is it that some days, you can barely, barely avoid going over your calorie goal? I often hit mine right to the target, after frantically tinkering with some little thing - like a stingy partial tablespoon of PBP or sadly enjoying a fraction of a serving of something.
And then other days, you just pile on the food and snacks, and find yourself hundreds of calories below goal?
Is there some caloric time / space continuum I don't know about?
I've got a large lunch and dinner planned, with a ton of snacks, and still have almost 400 calories left to use up. I'm not complaining at all (!!!!!), mind you, but golly, it does mess with my head sometimes. Hmmmm, I might back off one of the other snacks and enjoy a giant peanut butter cup from the local forbidden zone. Or upgrade my chicken sausages (which are very good btw, and dirt cheap in calorie coinage) to a couple of real brats.

I tend to look at my calories across the week rather than the day, days after I've done rowing/hiking I am ravenous, days's I've only done light walking/strength training my appetite is usually ok so I sometime leave some over for the days that I am ravenous. As long as it balances out over time I am good!1
