When working out, am I supposed to be focusing on burning my weekly calories consumed or my daily calories? I intake about 800-900 calories a day. I’ve lost 95 pounds since February and I’m at a plateau.

neither... you should be aiming to have 0 calories remaining for the day... so eat your goal and eat the cals you are burning from exercise.

Neither. You are supposed to be NETTING a certain number of calories per day. You don't even need to exercise to lose weight although it is good for your health. Unless you are unusually short, you should net at least 1200 calories per day. If you are only eating 800-900 cal/day and working out, you are undereating and at risk of serious medical concerns.4

Sometimes your body needs a break... maybe you are moving less outside of your workouts (N.E.A.T.). However, based on your calorie estimate, something is wrong. That would be far too few calories and you would definitely be losing weight.. so I suspect your calories are higher than you think.
Once you sort out your calories, you can either use your workouts to put you in a further deficit or "eat back" the calories you burn, depending on the deficit you want. Since my workouts are not often or intense, I like to focus on eating the right number of calories and whatever I burn in my workout is a bonus, but I don't track it. Just because you don't track your workouts doesn't mean they don't count.

I’m definitely not miscalculating my calories, I had gastric sleeve so it’s really hard to get my calories in.0

This seems like something you should ask your doctor. So little calories would be dangerously low for most people, so I would hope you are still under a doctor's care and taking prescribed supplements.0
