Weight loss stuck

Hello everyone. I’m having a hard time and feeling alone and ready to throw in the towel! I won’t but it’s frustrating. I am on 7 weeks of eating healthy. I track everything and eat 1200 calories a day. I walk daily 1.5 miles and hike on the weekends 4-5 miles. I am about 45 pounds over weight and for the last 10 days I am gaining 2 pounds than loosing but never below the lowest 10 day weight. It’s not that time of month and I don’t know what I’m doing wrong. I by no means am thin so I don’t know why the weight won’t come off.

1. Are you weighing and measuring every single thing on a digital food scale and a measuring jug plus spoons ?
Are you tracking every teeny tiny bite nibbles picked at food and drink ?

It's either water weight, you aren't weighing and measuring EVERYTHING you eat so you underestimate how much (yes even condiments and butter etc), or it's hormones. Those are the most likely culprits3

I’m thinking it’s hormones as I have the IUD but really don’t want to be stuck forever. Somethings got to give2

I have a food scale and love it. I am very cautious on weighing etc. It’s been so disappointing but I’m not giving up0

Here's a recent chunk from my Trendweight graph. Diamonds are scale weight, red line is my trend. Horizontal lines are 1 kg increments (2.2 lb). As you can see, a looong period of up and down, and up again on scale weight, followed by a steady (and taken in isolation, rapid) drop. This is what the lead up to ovulation, and then the week following, look like for me.
If you're confident that your logging is accurate, just stay the course.

Try eating a cheat meal or two to get your metabolism going again0

I have also had the IUD for about 5 years and I was very skinny post IUD and never had any problems with my weight even after having my son. As soon as I got my IUD I started to gradually gain weight. I went from weighing 115 to weighing 150 and could not lose any weight at all no matter how hard I tried. I just got my IUD removed last week and have already lost about 10 pounds and my stomach is much flatter. The hormones in the IUD could definitely be the reason why you are unable to lose weight.3

The hormones from an IUD can cause an increase in hunger (affecting calories in), water retention (not fat) and can impact energy levels (affecting calories out), this may make it more difficult to lose weight, but it won't make it impossible, CI<CO still applies.
OP's weight is fluctuating for the last 10 days, which is quite normal when losing weight.
Weight loss isn't linear. As seen in @Nony_Mouse 's graph and this one:

Open your diary? 7 weeks of consistent 1,200 logging should show a change.0
