Crispy Peanut Butter Protein Balls

Serves: 12
Quick and easy crispy peanut butter protein balls
INGREDIENTS
1½ cups oatmeal (I use old fashioned oats)
½ cup peanut butter or other nut butter (I like crunchy but creamy works fine)
½ cup honey
⅓ cup chocolate chips (dark or milk)
½ cup crispy rice cereal
1 teaspoon vanilla
Ground Flax/ Whey Protein Powder or Chia seeds (optional)- mine have 1 tablespoon of chia seeds
INSTRUCTIONS
Add all ingredients to a bowl and mix well.
Place mixture in fridge to chill for about an hour.
Remove and begin spooning a small amount of the mixture into your hands- roll into a ball.
Place in a container or zip-top bag and store in fridge.
And you can roll these into whatever size you like. I use a small cookie scoop (like this one) and mine are slightly larger than a quarter.

Also one tip- I use good quality chocolate for this recipe My favorite chocolate chips are Nestle Mini Chips. I prefer to reduce the chips by half & add a Tbsp of coco powder.

Try adding one can of chic peas. Rinse, take the skins off and mix with other ingredients. Adds lots of additional protein and you don't taste the chic peas.
