Grilled Chicken, Spinach, Rice with Greek Yogurt Dill and Cumber sauce.

Wow! I love focusing on better nutrition because it forces you to get more interesting/creative in the kitchen. I work full time and have a lot of responsibilities at the office. I never get out of the office for lunch so i used to order out everyday. When I started on this new journey I decided that i needed to bring my lunch in and the idea of meal prep was intriguing to me.

Below is my latest recipe and one that is delicious.

Macros: 54g Carbs/ 19g Fat/ 58g Protein

6oz Grill Chicken Breast (marinated in olive oil and italian dressing (dry powder) cut into long thin strips
1/2 cup Spinach
1 cup Jasmine Rice (Brown would work even better)
2oz Feta Cheese
Greek Yogurt with Lemon, salt, fresh dill and grated cucumber

I heat the chicken, rice and spinach for 2 or 3 minutes in the microwave, then i top it with the greek yogurt sauce.

    Yum! Very reminiscent of a good souvlaki! A salad that I make that would go nicely with this:

    1 1/2-2 cups lettuce
    1/2-1 cup tomatoes
    1/2-1 cup cucumber
    1/4 cup red onion
    1/4 pomegranate arils
    1/4 cup feta cheese
    2 tbsp black olives
    2 tbsp Cedar's Garlic and Dill Tzatziki

    I usually eat this with chicken kabobs marinated in a greek yogurt similar to your recipe with a little more herbs and spices (w/ red pepper and red onion) and/or brown pita w/ red pepper hummus and/or brown rice with olive oil and saffron.
