Oat Protein Pancakes!

Hey guys, just thought I would share my recipe for protein pancakes. They're excellent for recovering from a strength training workout or intensive cardio - they also have the right balance of protein and carbs!

Recipe:

1 Scoop whey
1 tsp nutmeg
6 Splenda packets
1 tbsp cinnamon
.5 cup skim milk
1 dannon light and fit yogurt (only 80 cals ea and delicious)
2/3 cup old fashioned Quaker oats
1 tbsp wheat germ

Mix it all in a bowl, pour it into a pan and fry it. For about 500 calories, its the perfect breakfast with a nice tall glass of water. Enjoy!

    Holy Splenda! I love my protein pancakes...but I use cottage cheese and egg whites instead of yogurt and protein powder.

    A really good alternative (I think) to Splenda is agave nectar, I mix a bit into the batter and drizzle a bit on the top when they're done. Yes, not calorie-free but give me 30 calories for 1/2 tbsp (agave is real sweet) over any fake sugar any day.

  • This got me thinking about other variations & topping with peanut butter versus any kind of syrup. :-)

    1 small container (1/2 cup) Egg Beaters
    1/2 cup low-fat cottage cheese
    1/2 cup dry oatmeal (not instant, but the quick-cook kind)
    1/8 tsp. baking powder
    1 packet non-nutritive sweetener (i.e. Splenda)
    sprinkling of cinnamon
    nonstick cooking spray
  • It's 1 serving for a larger person, maybe 2 smaller servings. You can try using cottage cheese, but I like this way the best.

    That's what I do. But I use egg whites instead of Egg Beaters and agave nectar instead of splenda. And yeah, I load it with at least a tsp of cinnamon. Mmm!
