@AR10at50 Karen, I haven’t used MFP for tracking in ages. When I went LCHF, I found it difficult to figure my macros without having to pay for premium and I wasn’t going to do that. And I assume it’s based on old science which says to eat a lot of fruits and veggies, which is way too many carbs for me.

@CamandJarvis I hope your ankle feels better! That's so frustrating when those things happen, especially when it's a previously injured ankle.

@matratazola That coconut milk dish is really good and you can add a lot of different veggies to it or keep it as simple as you'd like. The original recipe from the cookbook calls for 1 can of coconut milk, shallots, chilies, and mushrooms. Then a sprinkle of cilantro on top to add some freshness. We usually add a couple extra veggies, this time we used carrots, parsnips, onions, dried Thai chilies because we didn't have fresh chilies, and mushrooms. It's nice because it's a comforting dish that you can eat a bowl full of and it's not damaging. I also add a dash of garlic powder too!

@tishawj I hope your calf continues to feel better! Those can be so painful when they get pulled, that has happened to someone I know just by stepping onto or off of a sidewalk too!
