The minimum a sedentary male should be eating is 1,500 calories. Are you logging your exercise separately and eating back those calories?0

So are you netting 1500 calories, or does that not include your exercise?0 -
Many people have no concept of the calories in the food they used to eat, and their first intro is this site giving an eating goal usually based on losing weight.
Have you ever picked some past day before you started - and attempt to log what a normal day of eating might be.
Shoot, pick as many days as you want - you can always delete them.
Now, quantity will be impossible to nail exactly, unless you did packaged and fast food items - then it might be easy.
Because if MFP setup with a weight loss goal and weekly loss gave you 3100 calories to lose weight (you did select to lose weight, or maintain?), then you for sure were eating more than that before.
And you only have to eat less than you burn by a reasonable amount to lose fat weight.
Were you exercising before?
You might even be doing more now than you were back then.
Now - your logging may not be very accurate at all either in the past example meals - or currently.
It could be what you are logging may be 1500, but you are actually eating closer to 2000 or 2500 - though that would have to be some pretty bad logging.2 -
There's two ways you can do this. Either go with the goals MFP sets or go to a TDEE calculator, input height and weight and knock off your 500 calories.0

Is there a reason you eat little salt? Did a doctor recommend it? If salt is a problem: have you tried preparing your own food? Then you determine how much salt is in it.
