Vegetarian carb overload

Hi all, I’m fairly new to MFP and I must say it’s opened my eyes to my diet. Apparently I eat too many carbs, waaaay too many.
However, I’m a vegetarian (45+ years) who would like to go vegan, if possible, so my carb intake is probably higher because of that.

I have blood sugar issues, I’m not diabetic but it seems the carbs raise my blood sugar too quickly and then it drops just as quickly.

While I’m at work I’m on my feet all day and don’t seem to have an issue with my energy levels, I snack on my breaks. But there are times when I have an issue with being shakily hungry (shakily is a word, right?). Foggy brain, as well.

I’ll be following some of you with similar issues and I’ll gladly accept friend requests.

    Has a doctor diagnosed and documented your blood sugar issues? Did they give you any directives or advice?

    If you do need to worry about your carb level, I always find pursuing a positive goal (I need to get more of something) rather than a negative goal (I need to cut something down). So it might help to focus on ways to incrementally get a little more fat and a little more protein over time.

    About 25 years ago I had a fasting glucose tolerance test, after I got home and ate, I fainted a few hours later. The doctor told me I most likely had reactive hypoglycemia, but I didn’t think to get the test results to see what the test showed.

    I am trying to get more fat and protein, and my husband is trying to help as much as he can with making sure I do. I just need to find something that works for me, a carb junkie, lol.

    I would try to get your health squared away before limiting your diet further by going vegan. Get a full blood work up if you can considering the current world situation to make sure there aren't any other issues contributing to the problem. Understanding and treatment of blood glucose issues have changed a lot since the time you're speaking of.

    I try to plan out the protein in all my meals for the day ahead of time and build my meals and snacks around it.

    My all time favorite snack is half an avocado mashed with a boiled egg. Add salt and pepper. Yum! Obviously not vegan (I’m a vegetarian with no plans to go vegan) but if you’re still eating eggs I recommend giving this a try as a snack.

    I know you didn’t ask for snack suggestions it’s just so good I can’t help recommending it to people!
