Looking for some inspiration! I am a confident cook but feel bored of everything! Would love to hear what meals you have been eating. Vegan ideas welcome too

    Honestly, you’ll get maybe a few dozen ideas here, but there are literally thousands of vegetarian and vegan recipes on Pinterest.

    Pinterest is my main source of ‘what’s for dinner’ moments. Hasn’t failed me yet!

    If you don't mind gluten you can replace the meat in any asian stir fry with seitan. It's cheapest to buy seitan at the asian grocer where it is known as "buddhist mock meat".

    Vegan here. Some recent meals I've had:

    Whole roasted cauliflower in Korean bbq sauce

    Hot and sour soup

    Buffalo cauliflower & ranch salad

    Black-eyed pea soup

    3-bean cornbread pie

    Penne with cauliflower

    Chickpeas and spinach with rice

    Rosemary garlic white bean soup

    Gazpacho

    Cold peanut noodles

    Enchiladas

    Beet burgers

    Kitchari

    Tomato soup

    Nicoise salad

    (Yes, I know that's a lot of cauliflower, but I love it and can get it for pretty cheap).

    If you sign up, you can specify allergies etc. It has taken a lot of refreshing, but I've found a few veggie ideas I like the sound of. Whilst I'll modify the recipes to suit my calories/taste and what I can actually source during lockdown, it's a good source of inspiration!

    I also saw someone else (sorry, can't remember who) post a link to this reddit: https://www.reddit.com/r/1200isplenty/ A lot of posters seem to post their day's intake with photos and calories, so again, another source of inspiration.

    More veggie than vegan, but from playing with the above, I like the sound of:
    • protein pancakes (pancakes made with banana)
    • cucumber gazpacho
    • fennel and orange salad
    • carrot and coriander soup
    • peach, pesto and mozzarella quesadilla
    • caprese on sourdough
    • cinnamon baked apples

    Worth having a look to see if anything jumps out at you too. I find it more helpful to look at sites like the ones I've linked than just pictures of food, as I like to have a rough idea of the calories when pondering.
