Found this recipe on the Kraft Foods website. I halved the recipe since there is just 2 of us. I also substituted for some things and it came out super delicious! My fiance couldn't believe it wasn't horrible for you either! http://www.kraftrecipes.com/recipes/new-look-scalloped-potatoes-ham-69207.aspx

I got about 5 1 cup servings out of halving the recipe

4 Red potatoes cut into 1/4-inch-thick slices (I kept the skins on them)
1/2 container (8 ounces) of Fat Free Sour Cream
3/4 cup Fat Free Shredded Cheddar Cheese
3/4 cup reduced fat Sharp cheddar shredded cheese
1 package (7 ounces) of diced ham (My grocery store sells this near the pre-packaged deli meat)
2 green onions, chopped
2 tbs parmesan cheese

HEAT oven to 350°F.

COOK potatoes in boiling water in large saucepan 10 to 12 min. or just until potatoes are tender; drain. Remove 3/4 of the potatoes; place in large bowl. Add sour cream; mash until smooth. Stir in shredded cheeses, ham and onions. Gently stir in remaining potato slices.

SPOON into 13x9-inch baking dish sprayed with cooking spray; sprinkle with Parmesan.

BAKE 30 min. or until heated through.
