This is what I made today. Vegan picadillo with beans and rice, tostones and mariquitas.

I don't have the recipes written down but wanted to give your question some love.

Not only does that look amazingly good, but your plating is great. Looks like something you'd get served at a restaurant. I've gotta do some tostones soon.

That looks fantastic!! Rice and beans are a staple for me too, but not very low on carbs...

I made a lovely dinner with eggplant, ancient grains, mushrooms, garlic, half an onion, and some tomato. I don't think I even did any special seasoning because it was so flavorful already.
