02/10 …..xxxxx …..02/01 I am grateful for my ability to retire early at age 60. I am beginning to finally feel better rested and more in control of my life. Owning 2 motels and cabins left me working 7 days a week, 24 hours a day, with never a day off. The businesses were located on my home property so there was never any rest, peace or privacy. The number of employees – 1. Just me and the occasional handyman I would hire if the job was above my skill set. What will I do for the rest of my life? As a widow, travel is a bit scary. I am not sure yet. But hopefully I will have lots of time to figure it out.
02/02 I love my new house. It is old and smoky and needs lots of updating and work but I love the possibilities. Mostly I love that it allows me to have a separate apartment in the basement for my adult disabled son. I love we can work harder on independence for him.9 -

02/02 116.2 Lost the water weight which is good. I’m trying to treat my body nicely this week because my dad got admitted to the hospital on Sunday night due to Covid and it was a stressful Sunday night convincing him to go be seen (he’s still in there but he’s doing ok and is stable). It took me calling him like every 45 minutes to see how he was doing and telling him not to mess with dehydration due to gi symptoms. He’s a rather stubborn French Canadian.
My food has been good yesterday and today despite being tired/stressed and feeling out of it. I have to pick up our csa tomorrow night and I’m looking forward to the celeriac that is supposed to be in the box. I’ve never tried it and can’t wait to try a new veggie! Today’s breakfast was high protein & fiber molten chocolate cake made in the microwave and cottage cheese with defrosted blueberries and raspberries. I was so full from the cake that I was able to save the cottage cheese and fruit for a snack this afternoon. Dinner will be marinated jerk split chicken breasts, roasted butternut squash, and purple potatoes. I’m also excited for a colorful dinner with the purple potatoes and the orange squash!

02/01 Did not post. Did yoga in the morning and an active recovery 30 minute spin bike workout. My hamstring has been bothering me so I didn’t want to push it like I usually do.
02/02 I am grateful for my health and am able to show my body some love by exercising and eating relatively healthy for it. Did yoga this morning and plan to do a 30 minute spin bike workout.

2/1 - 128.6 - Hello to February and a new round! I did a great HIIT workout this morning, but I think it’s making me hungrier than usual. I’ve stuck to my meal prep though. It’s a gorgeous day here (so sorry to those getting buried with snow!) and I’ve already taken the kids out once. I hoping to get outside again this afternoon.
2/2 - 128.4 - My daughter declared yesterday afternoon that it was “Car Day” and we HAD to make a Car Day cake for her little brother (who is obsessed with cars and trucks.) This is exactly what I want my kids to see and experience - that cooking/baking is awesome and all foods are available as long as we eat them in moderation. I’m not going to ruin her fun by declaring we can’t have cake in the house because Mommy is on a diet! So we made a yellow butter cake with vanilla buttercream, and she went crazy with the sprinkles and asked me to write “Happy Car Day” on it. We tried to get little brother to do some sprinkles but he just tried to grab handfuls of cake. Then the whole family had small pieces after dinner and it went back into the fridge. Was I tempted to eat more of it? Absolutely, but I didn’t and I didn’t go over my calorie limit. I’m calling yesterday a win.

On a side note-since people are now self-publishing there are lots of inexpensive ebooks available. One author mentioned hers a few years ago in a FB group so I ordered her trilogy. It was so full of errors (punctuation and grammar) that I started to think no one had edited it for her. Another written by a former neighbor clearly based her characters on recognizable neighborhood folks. It was almost painful to read. It made me realize how difficult it would be to write fiction without “using” my friends.

I “use” real people all the time, but, unless they’ve won a roll in a book (I’ve done such auctions as fundraisers for rescue groups) and want to be recognizable, I either roll several together or camouflage them well. In fact, I’ve had people think certain characters are based on specific real people — they’re always wrong — and completely miss others. As we nefarious writers say — “be nice to me or I’ll put you in my book!”11 -

As for celery root, if you do not care about calories, I was given a restaurant puree recipe that was devine and uses 2 cups heavy cream for 2 lb of celery root.9

Thank you! Omg that celery root recipe sounds incredible! Maybe I could try to make it with evaporated milk instead which is a little less crazy than cream.
Molten lava cake recipe (recipe is super flexible). It originated from the cookbook Rocket Fuel but I've adapted it a lot over the years.
My current version:
1 egg
1/4 tsp cinnamon, I usually don't measure this and just add a few dashes
20ish grams of protein powder (I use 10 grams plain collagen protein and about 7ish grams plain egg white protein)
5-10 g cocoa powder. I used 12 g today because I wanted it nice and chocolatey.
1 tbs/16 g peanut butter/any nut butter
splash of vanilla
12 grams oat fiber or 1 tbs whatever flour your prefer
1-2 tbs inulin fiber (start with 1/2 to 1 tsp if your new to inulin, it can cause gas pains as your gut flora get used to it)
1/4 tsp baking soda
2 tsp coconut sugar (it just has a more complex flavor) og recipe called for 1 tbs I think.
15 g 0% greek yogurt
Mix it all up in a bowl and if needed add a splash of water so it's like a thick brownie batter consistency. Then, I microwave it for 35 seconds. Check it and pop it in for another 22 seconds. I like it partially cooked on the outside edge and molten in the middle. It's a lot better cooked less versus overcooked and completely solid. It's nice to have the soft cake texture mixed with the molten texture. It definitely satisfies the chocolate cravings that have been daily for like 2 weeks now. It's also great because you only dirty one bowl .
This version has 333 calories for a soup or cereal sized bowl of cake.7 -

02/01 192.1 10193 steps 1412 calories yesterday was a rest day. I got in 10 minutes of Zumba but this deep exhaustion plus stress related to dealing with their father.

THERE ARE NO QUICK FIXES OR SHORTCUTS to achieving permanent change.
REMINDERS: One or two thoughts which might give heart to some of you.- Daily weight fluctuations are normal, and can be as much as 2 lbs a day for no apparent reason.
- A general downward trend is what we are looking for.
- Eating out can cause apparent weight gain because of high sodium levels, but usually goes quickly. Drinking extra water helps with this.
- The human body does not react instantly to what we do to it. Sometimes it can take several days to see results.
- Plateaus are a normal part of the process. The body is consolidating and adapting to your new way of eating/exercising.
- The closer you get to your goal weight, the more difficult it becomes to lose weight, as your body becomes more efficient at using what you feed it.
- When you exercise you build muscle, which takes up less space than fat, so use measurements as well as weight to assess your progress.
- Getting/Staying fit and healthy requires a lifestyle change for most people.
