Breaking up deficit with maintenance?

So I have seen some mention of eating at maintenance for a week before going back to their normal weight loss numbers. I have not really looked into it but I am very curious as to what I should plan on doing.
Any information would be great, is this for those that are closer to their goals? I started at 389 and I am down to 372.
So really my questions...
When to do it?
How often to do it?
Does it work?
Anything else helpful!!!!
