Hassleback marinara chicken (a recipe I used to make frequently when we did Keto) and Swiss potato puffs. The puffs were ok; a bit eggy, so if I try them again I might try a different recipe1 -
Peking duck breast, kind of like Chinese tacos sipped with Vietnamese cahn soup for extra greens.

Pan fried sea bass, roast potatoes, butter blackened hispi cabbage, some leftover hollandaise warmed up low on the microwave with some lemon and butter to have on the fish.

The hubby cooked. Dutch zuurkool stampot (=mash mixed with sauerkraut), and some salt beef we bought at the Jewish deli plus store bought condiments of picalilly and english and french mustards. I have ordered beef brisket and going attempt my own salt beef. Takes 8 days with 7 days of dry brining and 1 day in the sous vide but doesn't look like a lot of effort.

Curry with homemade “easy” curry paste as I’ve made it since college: potatoes, onions and mushrooms, but with some added shredded chicken because husband was whinging about protein6 -
Nikumiso (ground pork, onion, ginger, red miso, garlic, soy sauce, mirin) with brown rice & baked delicata squash with butter, red miso and ginger. The recipe called for sake and sugar but I used the mirin to substitute for those two items as the only bottle of sake I have is a full 750ml which is too much for a non weekend night. And I never have actual sugar in the house. I didn't like the delicata squash. So no to acorn and delicata but yes to butternut.

The pictures in the recipe are much darker and the meat seems to have more moisture overall. I'm not too sure why mine is lighter and looser because my quantities were precise. Regardless it tasted good though a little salty from the miso. Perhaps it was due to the lack of sugar.

Today was almost a repeat of yesterday. Enjoying the heck out of this KA recipe rye bread, and a left overs dinner. I hadn’t logged consistently since before the holidays and am realizing now that I need to work to get my protein up 😕

Starter of an air fried arancini that we made made last week from leftover risotto that we dumped in the freezer. Main of salad nicoise from Alistair Little's recipe. I deviated slightly because after overcooking the potatoes a little, I thought it best to use the potato salad technique of mixing warm potatoes into the salad dressing.

"wedge" salad with grilled romaine, smoked blue cheese, red onion, tomato, bacon & blue cheese dressing. Plus oven baked fries which ended up a little softer than I would have liked but still tasted just like fried fries. I really need to buy an air fryer.

Starter of salad with smoked mackerel and beetroot using the leftover anchovy and garlic laced nicoise dressing from last night, thinned down with water. Main of smoked salmon carbonara which is not as decadent as it sounds, calorie wise. For two people we used a teaspoon of butter for infusing with garlic, one egg and one yolk a a tablespoon of parmesan, as well as 100g of smoked salmon trimmings and chive.

@BarbaraHelen2013 did you use the pb2 in the curry sauce? Did you have any issues with it clumping?0

@MinTheKitCat - I mixed up the PB2 with water until it was smooth and the thickness of standard Peanut Butter, then added the soy sauce and lime juice to that, plus a little mirin, minced garlic and ginger.
I think if I’d tried to just add the PB2 powder to the sauce it would be difficult to get it to mix in smoothly.2 -
I made shredded taco venison out of the bitty rounds we had stored, and then we had taco bowls out of said venison. It was absolutely delicious6 -
The prep work for pad thai. Stir frying goes so quickly my cookbook recommends to have everything prepped and measured out prior to cooking.
