My husband really likes hash browns ... so I made these ~ hash and eggs with Cajun spice.
π΄ Root vegetable hash - rutabega, yam, parsnip, carrots. (I have a lot of leftover carrots!) π₯π°
If you have more carrots than you know what to do with, pickling is an option. I use a spiralizer or the rough grating attachment of my food processor instead of the scary mandolin in recipe below. Keeps a few weeks in the fridge and can be used in any asian recipe calling for pickled turnip such as pad thai. Nice for adding a sweet/acidic crunch to sandwiches filled with salty charcuterie, similar in spirit of adding pickled carrot to bahn mi.

Smoked Salmon with poached egg served on WW english muffin with dill butter.10 -
Risotto w zucchini and saffron.
Pan fried zucchini.

Chicken satay with his and hers satay sauces because the hubby likes a mild one with lots of coconut whereas I prefer one with shrimp paste funk and lots of chilli. Side of salad with raw cucumber, and grillled pineapple and grilled red onion. Rice and chilli paste. Back into waste management mode as dinner was planned around using up the pineapple that had been sitting around a while.

A totally inauthentic bastardization of Vietnamese banh xeo. The asian supermarket were out of mung bean sprouts so we got alfalfa sprouts from the health food store as a substitute. The protein is traditionally thinly sliced poached pork and poached shrimp, not a chicken stir fry.

Pan fried chicken legs, onion mashed potatoes with butter & sour cream, salad of mostly tomatoes, spring mix and olives with a spritz of olive oil.
Hint: if you want to reduce the calories in mashed potatoes but still have them creamy replace a lot of the butter with sour cream. 2tbsp of sour cream is 60cals while 2tbsp of butter is over 200. Obviously, this only works if you like sour cream.

The hubby was so thrilled to see dutch andijvie (=escarole) at the green grocer that he offered to make dutch stampot (=mash with greens) tonight. Had that with some ready made Tesco meatballs and dijon mustard and a cherry tomato salad.

Grilled pork chop, kelp noodles w/pesto and salad of romaine, tomatoes, olives, parm w/spritz of olive oil.
I've had the kelp noodles several times now and they work well with pesto as well as Asian noodle dishes. I used them in Pad Thai one time and they worked well. 4oz of kelp noodles has only 6 calories so they are a good match with the highly caloric pesto sauce. I've learned it's best to soak them overnight as they can otherwise be surprisingly crunchy.
