My basic chicken adobo recipe
1 cup soy sauce
1 cup white vinegar
2 cups water
2 tablespoons of minced garlic
8 chicken thighs (can be done with breasts but I don't like it in adobo)
Dump it all into a pot and cook over medium heat (usually an hour) till chicken is tender.
I eat mine with white rice and any vegetable.

Ever try coconut aminos instead of soy sauce? I have a number of coworkers that swear it tastes like soy sauce and use it instead. Most use the trader joe brand. About half the salt of reduced sodium soy sauce and ok for those who are intolerant to soy, need gluten-free, etc.1 -
I marinade mine for 24 hours in the fridge. Not sure how much of a difference it makes, but I love it!1

Just made this (with chicken thighs) in a virtual cooking class (supporting a local store). We made pork and cabbage lumpia too.
The adobo version I did was soy sauce, apple cider vinegar (although type of vinegar was said not to matter), oyster sauce, garlic, a little honey, a little tomato paste, and chicken stock, with a bay leaf and peppercorns (although I just used pepper).2 -

I've tried it and coconut aminos don't taste right to me, although maybe it would be okay if I wasn't expecting it to taste like soy sauce. Since I have no reason not to use soy sauce, I do.1 -
