Other than chili or soup, what is your favorite (healthy) Crockpot recipes? I’ve found SO many that sound delicious and decadent, but I’m trying to cook healthier.

    When I used to eat meat, I used to crockpot a lot of skinless chicken thighs -- BBQ style, curry, Tex-Mex, Asian style. As an herbivore, it's my go-to for cooking beans & legumes as well as meat substitutes like jackfruit and trumpet mushrooms in many of the flavor profile. [My crockpot BBQ shredded jackfruit & trumpet mushroom sliders have gobsmacked many an omnivore :-) ]

    Well, what does "healthy" mean for you? Are you aiming for a particular micro/macronutrient profile, like high/low fat, low sodium, low carb?

    I traded in my crock pot for an Instant Pot. I haven't actually used the Slow Cook function in it yet, since the Pressure Cook function is just so much faster. I've made this pork goulash a couple of times and it's delicious: https://sweetandsavorymeals.com/slow-cooker-pork-goulash-in-the-instant-pot/ I pressure-cook it on high for 24 minutes instead of slow cooking for 5 hours but I bet that's also amazing. The only thing that's not ideal is the broth is quite watery; I'd like for it to be a bit heartier but I haven't quite figured out what to add that would do that, maybe potatoes or beans? It's good served over rice or with a small pasta like orzo.

    Buffalo chicken. Makes a lot and you can use it for wraps (lettuce or tortilla), salads, sometimes I just eat it with a fork.

    Onion and red pepper cut up. Frozen Chicken thighs. 2 cans chopped green peppers. One pack taco seasoning. High for about 6-8 hours. Stir. Delish! I've also made it with skirt steak vs chicken, very good as well.

    Crock Pot Carnitas: Cube up a pork shoulder and slow cook on low for 8 hours in salt water with garlic, onions, an orange, a few bay leaves, cumin, and pepper. Once its cooked and soft, shred the pork, spread out on an oven tray, spray with oil and shake a bit of cumin and chili powder on top. Roast it at a high heat until the pork starts to get a little crispy. I like it in corn tortilla tacos with pico and feta cheese, but its also great in burritos and taco salads. Way healthier than normal carnitas which are deep fried in lard.

    I often skip the poblanos because they don't have them at my regular grocery store, and will add whatever peppers I have on hand. I also don't bother with the oil before searing the meat as it seems unnecessary, even without nonstick pans. I've made this recipe skipping the searing and sauce making and just dumping everything in, and it's still turned out good, but it's definitely better if you do that first. It also freezes very well.

    Though we made some modifications - Used beef bone broth and cut it in half and may cut it down more. Used extra meaty ribs. The bones won't stay on so forget it looking like the picture, lol. Added a few of our own spices that pair well with it (quantities and spices vary with each batch).

    I also cook beans or lentils in my crockpot at least once a week (with just onions and garlic, and occasionally a carrot) and some kind of veggie soup with canned diced tomatoes, napa cabbage, and mushrooms . . .and whatever else I have on hand with either curry powder or chili powder.

    I like it for pulled pork and caramelized onions in addition to the usual stews and chilis.

    Highly recommend giving caramelized onions a try, if you haven't. You get a lot for minimal effort and can freeze the extra.

    Thank you. I’ve heard of Moroccan Chicken, but have never tried it.

    This Moroccan-inspired veg chili is pretty tasty. I like to add red pepper flakes or chili paste for extra heat. Add the chickpeas halfway through if you don't want them to get mushy. But I always add them at the beginning and don't mind them breaking down and thickening the entire dish.

    1 large onion diced
    2 cloves garlic minced
    1/2 inch peeled fresh ginger minced or grated
    1 tsp ground cumin
    1/2 tsp ground turmeric
    1/2 tsp ground coriander
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/4 tsp ground cayenne pepper
    1 bell pepper chopped
    14 oz. canned diced tomatoes (or use 1 and 1/2 cups diced fresh tomatoes)
    3 cups cubed butternut squash OR sweet potatoes
    1 can chickpeas
    2 cups cauliflower finely chopped (about 1/2 head)
    1 cup carrot peeled and diced (about 2 carrots)
    5 cups low-sodium vegetable broth
    2 tbsp fresh lemon juice (about 1/2 lemon)

    optional: chopped toasted almonds for serving
