Assuming you want food that's still healthy: look up Green Chile Chicken on Pinterest. It's 400 calories, but if you add Mexican rice and veggies as a side, you can bump it to 600 calories fairly easily. It's a nice, southwestern flavor and pretty tender.
For breakfast, two eggs with shredded cheese and mixed veggies can be roughly 250-350 calories (depending on cheese and veggies). Add a slice of whole wheat toast and a couple of slices of bacon/turkey bacon and some fresh fruit.
The general name of the game for that 600 calories is having a colorful plate.
Alternatively, if you have recipes that are lower calories (say 400-500 calories), incorporate 150 calorie snacks twice a day. They make little tuna snack packs that are 120 calories. A banana and nutella will get you close to 200 pretty easily as well, and it makes a pretty nice post workout snack.
I have enough to lose that 1800 is a deficit for me, so these are some of my go-to's.0
