Calling all vegetarians!

Need your help! I've given up red meat for over 8 years, but I'm ready to become a full vegetarian.

If you have NetFlix, watch "Change your food, change your life." It's a LOW budget film about how an ordinary mom went vegan. When I watched it, I went full-on veggie, (not vegan) simply because it was so inspiring! I TRY to be vegan now, but I don't beat myself up if I slip up. But being a plain-ol' vegetarian feels awesome!!!0

Not vegetarian, however have a few pretty good vegetarian friendly recipes! For example:
Spicy Quinoa Stuffed Peppers:
-steam 3 medium to large bell peppers (I do this in a pressure cooker as it's faster)
-cook 1/2 cup Quinoa (1/2 cup quinoa in 1 cup of water, bring to a boil, simmer for about 15 minutes until done)
-in a large frying pan, fry about 1/2-3/4 cup of chopped red onion, 1 to 1 and 1/2 cup of diced mushrooms until cooked. Add quinoa once cooked. Add 1 can crushed tomatoes, reserving juice, and 1 cup salsa (I've found safeway's Organic line of salsas to actually be the healthiest that you can buy from a store - if you've found a better one, I'm all ears!), mix and ensure heated.
-place bell peppers in casserole dish so they are standing, and fill with quinoa mixture. Bake at 350 degrees F for about 20-25 minutes. Enjoy!

There is a great cookbook called "1000 Vegetarian Recipes", every single recipe I have made from that book has been absolutely delicious. It is so diverse, really easy to follow, and it has recipes for every type of vegetarian. It has been my go-to cookbook since I first stopped eating meat.0
