Tasty Salad?

Hey guys,
So, my work has given me the task of making salads every day for lunch for about 4-5 of us! I work for a cafe, so we have a variety of different things to put in it!

For an example of recent salads, today's salad was:

Lettuce
Spinach
celery
tomato
cucumber
feta
swiss
apricot
apple
peach

With homemade salad dressing which was just oil, lemon juice and spices with s&p!

Anyway, we want to change it up so nobody gets bored! Any suggestions are great :D Thanks in advance

    The only salad I'll eat is taco salad. :)

    Romaine lettuce
    Black olives
    Tomatoes
    Shredded cheese
    Dollop of sour cream
    Salsa (takes the place of dressing)

    You can also add meat on there as well.

    I once spent a whole summer (I was doing Weight Watchers) eating spinach salad with sunflower seeds, garlic croutons and Brianna's poppyseed dressing...I was addicted. I guess that dressing wasn't the best choice, but I counted it, and it was simple & delicious!

    Sorry..I know I'm not being super helpful given your ingredients......

    Right now, I don't put lettuce in mine. Cucumber, onion, tomatoes, radishes.......ranch dressing......mmmmmm!!!!

    So...radishes, onions, mushrooms, carrots.....would be differnt...apple slices....

    Lettuce, sliced pears, blue cheese or gorgonzola crumbles (since it's so strong you don't need much), dried cranberries.

  • I put all the above, but add egg, or tuna, pineapple (yum) grapes, peppers, carrots, cottage cheese and also for a bit of a kick, chop jalepeno chillies up really fine and mix together, lush!! xx Hope that helps xx

    - Red Onion (diced)
    - Lime Juice
    - Feta (optional)

    Not a salad in the classic sense but super delicious.

    Black beans, mango, red bell pepper, green onions, cilantro/corriander, lime juice, jalapeno, served over lettuce.
    Either that or a combo of black beans, corn, tomato, red onion, cilantro/corriander, avocado, lime juice, and jalapeno, served over lettuce.

    Try some chow-mein on your salads.It gives you that crunchy fix.
    Maybe even some corn, if you'd like.
    Basically you can throw anything together and mix it up!

    My favourite is :

    Shred some roasted chicken
    Lots of baby spinach
    Cherry tomatoes
    Feta cheese
    Dice up some avocado
    And I use a honey ginger soy dressing.. SO GOOD! and soo easy to make.

    Nigella has a lovely salad: watermelon, feta cheese, olives (optional), red onion, lemon, mint and parsley. I've had so many compliments with this salad and people now ask me to make it for BBQs.

    Another of my favs is: spinach, tomato, spring onion, orange peppers, chicken, bacon (doesn't need much) sunflower seeds and then a balsamic dressing (small amount of OO, balsamic vinegar, herbs, & crushed garlic) yum yum!

    I LOVE salads that and soups are my two fav meals!
  • Thinking of my 2 favorite salads is making me hungry. So, I have to share:
    #1 favorite: Gazpacho (cold, liquid salad popular in Spain)
    Blend, keep cold, for refreshing tasty summer soup salad (with barely any calories!)
    Blend together: raw tomatoes, cucumbers, onion, garlic, olive oil, salt, balsamic vinaigrette. All to taste...usually made with more tomatoes than anything else. I have heard of people adding bell peppers, or other types of peppers as well but I feel that it changes the taste too significantly. I try and replace this salad as a meal everyday. Another suggestion would be to put diced veggies of your choice on top for crunchy texture, or a dollop of low fat sour cream for some calcium. It's so easy and delicious!

    #2 favorite: Mix chopped romaine and baby spinach leaves. Add finely diced green apple and onion (leave the onion out for a sweeter salad). Top with feta/blue cheese crumble (I prefer feta and you can get reduced fat), walnuts, sunflower seeds, and dried cranberries. I always love crunching up croutons in my salad. Dress with rasberry dressing of balsamic of your choice! I love ken's raspberry walnut dressing, and also I love love love reduced balsamic glaze on pretty much anything, including my fingers. ><

  • Broccoli Salad!



    Mix 1 cup of mayo with 1/4 cup vinegar. Add some sugar (or sweetner) to taste.

    In a large bowl put broccoli florets, some shredded cheddar, red onion, bacon bits, celery, and some walnuts.

    Mix with the dressing and let sit for a bit. YUMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM!

    You can use reduced fat cheese etc also :)
  • Layer this in order

    Spinach
    tomatoes
    red onion
    mushrooms
    boiled egg
    crumbled bacon or bits

    Dressing as follows
    oil,vinegar,ketchup, sugar or sugar substitue.
