Spinach Chicken Salad

I have been eating this spinach chicken salad for the last two weeks for dinner. It is really good and really satisfying. The calories will vary from day to day because some day I will add hard boiled egg whites, or tomato but what is always included is the following:

Baby Spinach 2oz
Grilled chicken strips 3 to 4 oz.
Baby carrots 2oz ( chopped)
Grilled mushrooms about 5
Sharp Shredded Cheese (Half of 1/4 cup)
1 tbs Extra Virgin Olive Oil
2 tbs Balsamic Vinegar

I seasoned the chicken different every day depending on what I am in the mood for. Some days I use cayenne pepper or paprika. Some days I have used cumin and pepper and some seasoning salt just to give it a little bit of flavor. I do not use much of the seasonings just enough to give the chicken some flavor.

Grill the chicken until it is done, in the meantime I throw all of the ingredients into a plastic container. Once the chicken and the mushrooms are grilled I combined them with all of the other ingredients toss them until everything is combined. Serve the salad on a plate spread the cheese on top and you have the following delicious salad.
