Hi there
I'm new here. Been yoyo dieting for years. I always get stuck on what to take to work for lunch, I end up taking the same thing day after day (usually cup a soup or in the summer a salad), I get so bored that I end up in the works restaurant pigging out or eating crisps. I share an office so no fish or egg based lunches please, and no salad cos I'm so tired of salad I think I may grow bunny ears.
I love foods with a bit of zing, spicy or salty - basically something with taste that I can look forward to. - Oh although I can use the microwave I'd rather not. There's usually a queue to use it !
Anyway - any help or hints appreciated.

How extreme is the no egg rule? Would that eliminate something like a vegetable slice (grated zucchine, carrot and other goodies in a kind of crustless quiche?
I share a staffroom too, but goodness knows what sort of riots there would be if anyone tried to ban canned tuna from it! lol0 -
You could cook some chicken on a sunday, get some mountain bread some salad ingredients and make a wrap.
You could put the chicken in a marinade first for the zing...0 -

Bacon and Vegetable Slice (You could leave out the bacon - still yummy)
4 bacon rashers trimmed of fat and rind
! leek sliced (or onion)
2 medium zucchini (courgette), grated
2 medium carrots, grated
100g reduced fat tasty cheese, grated
1 cup self-raising flour, sifted
5 eggs, lightly beaten
1/4 cup olive oil
2 teaspoons dijon mustard
1/2 cup natural low fat yoghurt
baby spinach leaves (or other salad leaves (to serve)
Wrap the bacon and leek in paper towel and cook in the microwave on high for 2 minutes. Dice the bacon.
Combine the zucchine, carrot, chees, four, bacon and leek in a large bowl. Stir in the combined eggs, oil and mustard. Mix gently to combine.
Coat a square (19cm) microwave dish with cooking spray.
Pour misture into dish and cook in the microwave for fifteen minutes until eggs are firm. Place unerd a grill for 4-5 minutes or until top is golden and brown.
Serve with a dollop of the yoghurt and the spinach leaves.
Makes six servings.
Although this is a microwave recipe, I usually do it in the oven - about 40 minutes on 180 degrees celcius, or until cooked.
This recipe came from a Weight Watchers' cookbook.
It works out to about 300 calories per serve (without the yoghurt and spinach.
You could probably do this with egg whites instead of whole eggs.
I have another recipe which is a variation on this theme. I will fish it out an post that as well.

Country Corn Bake
1 onion, peeled and grated
1/2 cup (one small) carrot, grated
1/2 cup (one small) zucchini, grated
1/2 cup seeded and chopped red capsicum (pepper)
1/2 cup diced celery
1/2 cup finely chopped shallots (chives would also be nice)
4 rashers bacon trimmed of fat and finelt chopped
440g can corn kernels
1/2 cup grated low fat tasty cheese
1/2 cup SR flour
30 g melted butter
4 eggs
salt and pepper to taste
Combine all ingredients in a large bowl. Mix well to combine. Spoon micxture into a greased and dusted pan microwave dish.
Microwave on 60% power for 18 minutes or until set.
You could leave out the bacon and the salt - still tasty.
You could cook in the oven on 180 degrees for about 45 minutes or until set.
30g (tablespoon) melted butter
4 eggs
salt and pepper to taste
Combine all ingredients. Mix well to combine.
