pumpkin "pudding"
Since I can't eat dairy or gluten or sugar, I created a version of pumpkin pie that also does without the crust calories. Follow the canned pumpkin pie recipe but substitute light coconut milk for milk, and agave for sugar. Pour into a pie plate and bake about twice as long as the recipe recommends. It is so good that my husband and son love it too.

I make the same thing with nonfat condensed milk and maple syrup (only a little). MMMMMMM!0

right on, from my understanding there are a lot of milk alternatives like rice milk, coconut milk, soy milk, etc. thankx for the recipe.0
