If you are okay with gluten, seitan can be used just like meat in stir fry recipes. Example recipe in the link. I buy tins of it in the Asian supermarket where it will be known as mock buddhist meat.

Have you considered Tempeh? It's a fermented soybean preparation. I like to dice it up as a chicken substitution.0
