Looking for freezable meals

Looking for some freezable meals. The key here is to have flavorful not dried out meat. Has to be low in calories but filling. And has to be able to be heated or microwaved from frozen and not thawed out for a day. I am always on the run and looking to replace takeout.

Most frozen recipes I see have tons of cheese and pasta - not too healthy.

Ideas?

    Ground turkey is still moist after being frozen. Turkey burger with your favorite veg. Soup, of course, would stay moist, but might not be quick heating, unless you figure out a way to freeze it flat and not make a mess getting it into a bowl to nuke. I like black bean burgers and mushroom burgers, both of which you can buy frozen or easily make yourself. Stir fry and rice. Rice and beans.

    Just cook something you want to eat, cook enough for 4 portions and freeze the extra portions (in foil dishes for the oven or plastic for the microwave).
    Wet dishes work best - meat in gravy or sauce. I would say casseroles but I'm aware that an American "casserole" is significantly different from our British/European casserole.

    Anything braised. Once a month I cook a triple batch of a main with a girlfriend to fill up our freezers with weeknight meals. Tripling a recipe that serves 4-6 is not more work than making a single batch if you use the food processor for chopping onions, garlic or other veg. Our go-to recipes are chilli con carne, bolognese sauce for spaghetti, dak dori tang, coq au vin, chicken cacciatore, beef rendang and other curries, boeuf bourgignon, cullen skink chowder. Look for recipe versions that contain a lot of veg so you don’t need to do that separately when warming up a freezer meal. I use Marcella Hazan’s bolognese recipe and Thomasina Miers’ chilli recipe.

    The recipes above warm up in the microwave or on the stovetop after defrosting overnight. If you buy some aluminium take away containers (amazon) or have a lot of small ovenproof casserole dishes your freezer meal repertoire can include meat loaf, lasagna, vegetable lasagna and this easy gratin recipe which needs to be made in a large nonstick vessel otherwise cleanup is a mess. Potatoes should only be frozen after cooking completely as otherwise the starch gets converted to sugar.
