Currently starting back into my health journey.. looking to get back into shape and fit into my jeans. I have a fast paced job and work long hours on my feet so need help with easy meal prepping ideas and quick snacks that are healthy. For snacks it depends a bit on your goals but I would say that fruit is a good bet. If you have the time and want the protein, go for fruit smoothies with protein powder.
Lunch and dinner you can do rice + bean + chicken + vegetable. You can vary the bean (peas, lentil, black bean, red, etc), you can vary the chicken sauce and you can also combine different vegetables that you can have frozen to save time. Low fat minced meat is also very versatile.
Breakfast and maybe snacks, you can go for overnight oats. You can prepare them in a day for several days, and you can try different flavours and recipes to add variety.
Overall, you can do 50% meal prep and 50% cooking, if you are getting bored in the beginning. Start slowly, gain the lean cooking habit and then start improving and experimenting. In the end, just focus on aiming for a goal you can reach, and stick to it. Good luck!0
