Southwest Chicken Soup

I like to throw soups together. This one was really yummy!

In a large sauce pan
11/2 teas olive oil
1/2 onion chopped
2 cloves garlic pressed
Sauted til tender
1 can markers mark chunk chicken
1 carrot grated
2 potatoes grated
1 can rotel tomatoes and chilies
1 can corn (I didn't drain)
1/2 carton of meijer fat free reduced sodium chicken broth (about 2 cups)
Let simmer til vegies are tender
Topped with a tablespoon on shredded taco cheese

I wanted this to cook quickly, that's why I grated the vegies

I forgot to get the nutritional info. I'll post that in a follow up :blushing:
