Unsaturated fat amounts

Why are there such small amounts of unsaturated fats allotted in the nutrition section of MFP? I concentrate on keeping my saturated numbers low, but I am always way up on the unsaturated fats at the end of the day.

There aren't small amounts allotted: the goal is actually 0, because there aren't any official guidelines on what the minimum should be. It's one of those goals where 'going over' is the goal (for example protein, vitamins...) rather than 'staying under' (saturated fats, sugar).

If you look in the nutrition readout, for poly- and mono-unsaturated fats, in the total it will register these fats as a negative number if you eat some. Is this correct? What does this do to the totals? Does it subtract from your fat totals now?

Did you read the post above? The goals are zero because there are no accepted official guidelines about the amount to eat. You can set the goals to anything you like, if you want there to be a positive number there.

Your fat total is the total of all fat entries in the food items you logged in your diary. These subtotals are just giving you information about the types of fats in the food items you logged in your diary. The negative numbers in those sub-items don't affect the other totals.
