If you have a late-night workout—should you still have a protein shake with water, even if it’s as late as 11 p.m.?

When you eat has little impact on weight loss - it’s a matter of personal preference. If the shake fits your calories and you can digest / don’t find it interfering with your sleep, then go ahead.0 -
The anabolic window is a myth. You should scarf down that protein late if you need it to hit your daily target, not because you had a late workout.

Eat whatever you like, whenever you like . . . ideally in a way that adds up to sensible average calories and reasonable overall nutrition over a few days.
Notice how you personally feel with various different schedules/foods, and adjust if necessary to optimize subjectively.
That'll be fine.
I have a lot of late night workouts. Sometimes I eat a whole dinner after, sometimes snacks, sometimes (rarely) nothing, but never protein shakes at any time of day. (Nothing wrong with protein shakes, I just don't personally enjoy them, and I can get ample protein from tasty food, even as a vegetarian.)
My body weight changes are predictable from my calorie level, no matter what time of day I eat. That's been true for nearly 10 years, loss then maintenance.
My exercise performance is fine, with sleep and recovery mattering at least as much if not more than food timing or food choices.
Muscle mass gain is fine, too, if I put in the work and get reasonable nutrition, especially but not exclusively protein.
I think it's not as complicated as marketers and influencers in the blogosphere want us to think.
