  • i didnt have any blueberries on hand so instead i used strawberries and bananas :) i have them in the oven now as we speak!

    I have them in the oven right now, can't wait to try! I used light butter as I couldn't get hold of fat free, but it still works out at around 75cals a muffin.

    I made these using saisburys butterlicious light and they were lovely. Worked out the calories at 93kcals per muffin after i created a recipe for them on here.

    SERVING SIZE: 1 muffin. It is 69 calories per muffin (if you make 12 muffins out of the batter). The entire batter comes out to 827 calories so just divide that number by how many you make (your pan may be bigger or smaller or if you wanna make mini muffins). I put how many calories each ingredient is in case you want to sub or switch.

    Ingredients

    • 1 cup all-purpose White or Wheat flour (400 calories)
    • 1/3 cup Splenda (160)
    • 1 tablespoon baking powder (0 calories)
    • 1/2 teaspoon salt (0 calories)
    • 1 cup milk (90 calories)
    • 1 egg (74 calories)
    • 1/4 cup Fat Free Butter (20 calories)
    • 1 cup blueberries, rinsed and drained (83 calories)


    Directions
    1. Combine flour, sugar, baking powder, and salt. Mix in milk, egg, and butter; mix just until dry ingredients are moistened. Fold in blueberries. Fill pam sprayed muffin cups 3/4 full with batter.
    2. Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes (or until it is baked all the way through).

    They're really tasty, hearty, and low calorie/low fat. Enjoy :)

    I'm trying these now...but shouldn't the splenda be 0 calories? I know it technically has calories, but your body doesn't absorb them so the net would still be 0. Why does it say 160?

    THANK YOU FOR SHARING! LOOOOVE blueberry muffins! Will sub the butter for flax oil, will try using soy or almond milk and instead of splenda will use maple syrup! Will let you know how it goes when I get to bake 'em! :happy:

    Fat free butter???? Butter IS fat. That doesn't sound right. Either it isn't really butter or it's extremely processed. I would sacrifice the calories for real butter if I were you.

    Otherwise, this recipe looks yummy!

    I'd love to make this recipe, but what is fat free butter. I live in a small northern town in Ontario Canada and have never heard of it. Could you suggest a substitute.
