Pumpkin Crockpot Steel Cut Oats

This is a variation of a recipe I found on WW. Its really delicious! You may have to play around with the amount of oats you add depending on your crockpot. This is what works with mine, it might not be perfect for yours. If you love cinnamon, you will love waking up to this! By the way, it's great hot or cold.
6 cups water
3 cups canned pumpkin (or 3 cups ANY fruit, chopped or whole depending on what it is)
2 cups steel cut oats
1/2 cup unpacked brown sugar (or honey if you prefer, nutrition info will be diff if you use honey)
1-2 tsp ground cinnamon, to taste
1/2 tsp salt
1/4 tsp ground nutmeg (I only use if I'm making pumpkin or apple)
Place everything in crockpot, stir well.
Cover and cook on low for 6-8 hrs, stir well before serving.
Nutrition info is based on canned pumpkin.
Makes approx. 8, 1 1/4 cup servings
Calories 213, Carbs 43, Fiber 8, Protein 7, Fat 3
Really yummy if you use pumpkin pie spice or apple pie spice in place of cinnamon and nutmeg

Yum! I just started eating steel cut oats, so far I've been using only frozen fruit to sweeten it. I love pumpkin so I am definitely going to try this!0

Just FYI for anyone who makes this, spray your crockpot with cooking spray before you put the ingredients in..totally forgot this morning lol0

If substituting honey for the brown sugar, do you use the same amounts? It would seem that honey would be a bit sweeter than brown sugar.0

Made it a few days ago and have been eating it every day since. I cooked it on high ofr about 3 hours and divided it up to heat up in the morning. I also added frozen berries to each bowl. YUMMY! Thanks!0

I put dried cranberries in my steel cut oatmeal--when I slow cook it, then I add some frozen berries before I eat it. I bet the cranberries would be awesome with the pumpkin.0

That sounds really good! I have made it before with berries..and they just burst when they are cooked...soooo delicious!0 -
I made a crockpot full of this recipe last night! Woke up this morning to awesome aromas floating around in my home!!! Just had my first bowl.......DELICIOUS!!!!!!

I cook my plain steel cut oats in a crock pot. Then place a 1/2 cup scoop (after cooked) on a foil lined baking sheet and freeze. After freezing place all "cookies" in a zip bag, and thaw in microwave when you need a serving. I add whatever extras I want that day after thawing, since my tastes change from day to day.
Instead of spraying my crock pot, I line it with the crock pot slow cooker liner bags. Just throw away when done.

I've actually made it with both apple sauce and chopped apples. Both are good, I prefer the chopped apples but applesauce is a good time saver! I always use no sugar added.0 -

I tried it with applesauce and it did not turn out very well. One thing to keep in mind is that applesauce (depending on the kind) could end up making it a bit sour from the acidity. You might need additional sweetener.
Also, I made it at about midnight and let it go on low overnight. When I got up to check the next morning, it was all kinds of annoying to deal with. Despite me stirring well beforehand, it the pumpkin baked to the sides of the crock pot, and it just seemed not so great. It could do with occasional stir, which is more difficult if you're sleeping through the process.0 -
Has anyone tried making this in a rice cooker? I always make my steel cut oats in a Zojirushi (porridge setting) and I might try this recipe using it...though I know I'll have to prep it in the morning instead of leaving the oats in water overnight like usual.0

I made steel cut oats last week and I put it on high for about 2 hours then turned it to warm to 8 hours. It was perfect.0
