My hubby was so grateful that I did his income tax that he offered to take me to any expensive restaurant of my choosing. I chose Nobu, and have been making this salad ever since with a few modifications to make it easier to do at home.
Any green salad will do if you don’t have spinach. I bought dry miso powder online. Don’t bother deep frying leeks. The pre-fried crispy onions or shallots that Americans use for Thanksgiving green bean casserole works great. Alternatively you can buy crispy fried shallots at the Asian grocery store. Lemon or lime instead of yuzu juice.

We have a salad with dinner every night so I need to change it up as well. I make my own dressing. There are so many easy recipes out there, and they will keep for a few days. So my salads consist of four main ingredients: Some kind(s) of greens, some kinds of fruit (dried cranberries, avocado (?), apple, watermelon, etc, some kinds of nuts, and some kinds of cheese (feta, cheddar, fontina, parm, etc). I can get so many different combinations and never have to repeat. And every few days, I will do a traditional one of tomatoes, cukes, onion. Croutons help, too!

Pomegranate arils, halved grapes, mandarin oranges, mango, apple, strawberries, blueberries, blackberries, raspberries, haskap berries. Little cubes of cheese. Pumpkin seeds, sunflower seeds, walnuts. Beans. Eggs. Chicken.
